These pancakes are quick to make, delicious to eat, and a great way to use up leftover oatmeal. And if you’re left with leftover Leftover Oatmeal Pancakes, you can refrigerate or freeze them; toasted in a toaster, they make a quick and delicious snack. (Here we admit we sometimes cook oatmeal just to make these pancakes which we then call “Pretending-They-Are-Leftover Oatmeal Pancakes”.)

To make this recipe vegan, substitute the following:

  • for eggs, use flax eggs (2 tbsp ground flax seeds + 5 tbsp water stirred together and left to rest 5 minutes)
  • for buttermilk, substitute vegan yogurt or use nut or oat milk and a squirt of lemon (to provide enough acidity to activate the baking powder).
  • for butter, substitute the fat of your choice, or leave it out.

Pancakes vary depending on the methods people use to make their oatmeal, and the type of flour they use, so adjust this recipe to make it your own!

Feeds 2-3 people.

Ingredients

Combine:

  • 1 cup cooked oatmeal
  • 1 1/4 cup buttermilk or yoghurt/milk combined
  • pinch melted butter
  • 1 tbsp agave syrup or honey
  • 2 eggs beaten

In a separate bowl, combine:

  • 3/4 cup oat flour or bran (substitute additional wheat flour; Cedar Isle hard or soft wheat works beautifully)
  • 1 cup wheat flour, whole or white
  • 2 tsp baking powder
  • 1/2 c wheat germ
  • 3/4 tsp salt

 

Instructions

Combine dry ingredients in one bowl and wet ingredients in a larger one.

Add dry ingredients to wet, and stir with a few beats to combine. Add flour if the dough is too wet, or water/milk if the dough is too thick. For best texture, avoid over-mixing.

Heat frying pan to medium-low, and oil or butter lightly. Scoop batter into pan to make the size of pancakes you want, then cover the pan to cook until the tops are dry and bubbly. Waiting until the tops are dry helps keep pancakes from being “gummy” inside. Flip pancakes and adjust temperature if the bottoms are too brown or not brown enough. Cook, uncovered, on the flip-side until the bottoms are nicely browned.

Serve immediately or keep covered in a heated oven (200F) until eating time.

Top with syrup, fruit, or anything else your heart and body desire.
